Going gluten free means cutting out some of the old and introducing the delicious new. I’m completely addicted to this healthy snack.
1 cup slivered almonds
1/2 cup raw sunflower seeds
1/2 cup raw pumpkin seeds
1/2 cup walnut pieces
3/4 cup unsweetened coconut flakes
1/4 cup coconut oil
1/3 cup honey
1 tsp. vanilla extract
1 tsp. ground cinnamon
1/2 tsp. nutmeg (optional)
Sprinkling of sea salt
about a 1/2 cup dried fruit (I used dried cranberries and goji berries, raisins are great, too.)
Preheat oven to 300F.
Mix together your choice of nuts and coconut flakes into a large bowl. Sprinkle in the cinnamon and nutmeg.
In a small bowl combine coconut oil, honey and vanilla extract. Microwave this mixture for 35 seconds. Immediately add this mixture to the nut mixture and stir.
Evenly distribute this new mixture onto a large baking sheet that has been lined with foil or parchment paper. Bake for 25 minutes, stirring twice during cooking time. Remove from the oven, sprinkle with sea salt and then the dried fruit. Press the mixture flat with the spatula.
Let your snack sit for 20 minutes before breaking off the pieces for snacking and storing.
