Oh my, it has been months since I had me a grilled cheese. Currently, I’m visiting family, and to my surprise there was gluten free bread in the freezer and dairy free cheese in the fridge. Trying to recreate one of my favorite grilled cheeses I created this combination with the materials on hand.

Ingredients
2 slices of gluten free bread
2 slices of dairy free (casein free) cheese
1 small handful of arugula (or spinach is great, too)
¼ avocado, sliced
2 Tbsp. dairy free pesto
Butter to spread on bread (use a dairy free butter or clarified butter)

Directions
Thaw your possibly frozen gluten free bread.
I also like to melt a little bit of butter to be able to spread on the bread more easily.
Coat the insides of each slice of bread with a good amount of pesto. You cannot have enough pesto.
At this time I preheat a greased frying pan over medium heat. Use butter or a coconut oil spray.
Then build the sandwich any way you see fit. Add a slice of cheese. Then the avocado, the arugula, followed by the other slice of cheese and the other slice of bread.
Coat each side of the sandwich with butter.
Grill sandwich for a couple of minutes until the bread is lightly browned. Flip and continue to cook until browned. I prefer to cook my sandwich with the lid on to make sure it’s nice and meltie.
